Pumpkin Raisin Drops

Everybody wants a sweet treat at Halloween. Keep from reaching into the candy bucket by enjoying one of these Halloween cookies. They have all the sweetness without the fat and sugar.



INGREDIENTS:

1 beaten egg

1/4 cup canned pumpkin

1/3 cup brown sugar

1tablespoon cooking oil

1 teaspoon vanilla

1/4 cup all-purpose flour

1 teaspoon pumpkin pie spice

1/4 teaspoon baking soda

1/8 teaspoon salt

1/4 cup raisins Nonstick spray coating


DIRECTIONS:

In a medium mixing bowl stir together egg, pumpkin, brown sugar, oil,


and vanilla. In a small mixing bowl stir together flour, pumpkin pie spice, baking soda, and salt. Add dry ingredients to pumpkin mixture. Stir in raisins. Spray a baking sheet with nonstick spray coating. Drop the dough by rounded teaspoonfuls I inch apart onto the cookie sheet. Bake in a 350' oven for 12 to 14 minutes or till done. Cool on a wire rack.


Makes 24 cookies ( 24 servings). Calories: 42/serving
